Mixed Berry Vanilla Bean Cream Tarts



Ingredients
For the crust
  • 1 1/2 cup almond flour
  • 1/4 cup + 1 tablespoon coconut flour
  • 1/4 cup + 1 tablespoon tapioca flour
  • 1/2 teaspoon baking soda
  • 4 tablespoons ghee
  • 4 tablespoons maple syrup
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • pinch of salt
For the vanilla bean pastry cream
  • 1 14-ounce can of full fat coconut milk
  • 5 eggs yolks
  • 3/4 cup maple sugar
  • 1/4 cup tapioca flour
  • a pinch salt
  • 1 teaspoon vanilla extract
  • 1 vanilla bean, cut open lengthwise and beans removed with the back of a knife
  • 1 tablespoon unsalted butter or ghee
For the glaze
  • juice of 2 limes
  • 1 tablespoon water
  • 1 heaping tablespoon honey
  • zest of 1/2 lime
For the toppings
  • 1/3 cup blueberries
  • 1/3 cup blackberries
  • 1/3 cup raspberries
  • 1/3 cup strawberries
  • mint leaves
  • organic powdered sugar (optional)
