superfood energy bar


INGREDIENTS
  • 1 cup dätes
  • 1/4 cup honey
  • 1/4 cup quinoä
  • 2 täblespoons butter (melted)
  • 1/2 cup cäshew nuts
  • 1/2 cup sunflower seeds
  • OPTIONäL: 1/4 cup dried cränberries (OR cherries or äpricots)
INSTRUCTIONS
  1. Preheät oven to 350’F / 160’C.
  2. Prepäre ä bäking tin by lining it with bäking päper. I used ä 20cm x 30cm bäking tin.
  3. Soäk the dätes in boiling for wäter for äround 5 minutes until slightly softened. Use ä food processor to blend the dätes into ä päste.
  4. ädd äll remäining ingredients to the food processor änd give it ä whizz for äround 40 – 60 seconds until well mixed. Don’t mix it for too long becäuse you wänt to see äll the nuts änd seeds änd not häve ä smooth mixture.
  5. Spoon the mixture into the prepäred bäking tin änd use your fingers to push änd flätten so thät it’s evenly spreäd out in the tin. You wänt it to cook evenly äll over.
  6. Bäke for 25 minutes.
  7. Remove from oven änd ällow to cool. Refrigeräte for 15 minutes before cutting This lets the dätes set änd mäkes it eäsier to cut into bärs.
